    A USDA Prime New York strip in the hot tub...👍

    I was in the brand spanking new Costco in Torrance, Ca the other day and they had a display case of nothing but USDA Prime beef that was the most beautiful display of meat I've ever seen in a big box store.😋 They had every cut of the cow that were all Prime. None of it was prepackaged. You told the clerk what you wanted and wrapped it for you in butcher paper. I bought 3-2 1/2" thick New York strip steaks that were almost 2lbs each.

    Yesterday I cooked one of those YUGE steaks for my neighbor lady, Scary Mary, and I for dinner. She is an inactive Pit member. She just pays her membership but never goes online to the Pit. I do all of her BBQ, grilling for her even though she has 2 electric smokers and a 4 burner gasser.😎

    I decided that I would start the bad boy in the bath tub. I gave it a 4 hour bath at 135°. I had dry brined it overnight first. Then I fired up a whole charcoal starter of Kingsford BB and let ash up. I pour those into the Slow n Sear that was in my 26" Weber Kettle to sear them. When I got the crust and color I wanted I pulled it. I took it inside and put some freshly ground pepper on it and added some compound butter I made earlier in the day. I sliced it into about 1/2" slices and served it. Al came out quite nicely.😋 It was so YUGE there were leftovers for today's lunch.

      Nice. I am hating that I can't have a kettle anymore.

      I think I'd go down a bit in temp on the bath, but that's just me.

      Looks fantastic. I had a much thinner Costco prime NY strip last night. Think I'll go for round two tonight.

      Breadhead well you've given me incentive for the weekend. I'll be receiving 4 Wagyu Tomahawk Ribeyes from SRF on Friday. Now I will cook one via SV and SnS on Saturday.

        It really is a great option. Scary Mary mostly eats beef tenderloin because she likes real tender steaks. She said this was her favorite non-tenderloin steak ever.

          That's it! No more checking in to AR in the evening. It's going to have to be in the morning. That steaks looks sooo good! At Christmas they had the whole prime strips $25.00 off. Wish I had bought 2. Still have a chunk in freezer.. Has already had the hot bath, ready to roast or smoke
